Ingredients:
6 tablespoons butter
3 eggs
2 cups milk
1 cup flour
1/4 teaspoon salt
1 teaspoon cinnamon
1 tablespoon oil
Jam
Powdered sugar or whipped cream to top
Directions
Melt the butter in the skillet. Turn off the heat and set the skillet aside.
Beat the eggs with 1/2 cup of milk until they’re well blended.
Add the flour and beat just until it’s mixed. Do not over-beat.
Add the remaining 1 1/2 cups of milk to the egg mixture. Then add the melted butter, salt, and cinnamon.
Add the oil to the skillet and heat until it’s very hot.
Drop about a tablespoon or two of batter into the skillet, and tip the skillet around until the batter is spread thinly across the skillet.
Watch them carefully as they cook. They should only need a minute or so to cook before the edges get brown. Flip it over and cook the other side.
Use a spatula to remove it from the skillet. Scoop jam into it and roll it up, then sprinkle with powdered sugar or whipped cream.
